Yacon is derived from the root of the Yacon Plant from Peru. This natural sweetener is light to medium brown in color and has a consistency similar to molasses. Yacon syrup can be used for cooking, baking and added to tea or coffee.
Yacon's sugars are primarily composed of components called "FOS", short for Fructooligiosaccharides, which is a low-calorie carbohydrate that is sweet light sugar. Because of this, and its nutritional properties, the syrup is often used as a substitute for sugar, honey, molasses and other sweeteners.
Since starting my Keto diet in January 2019 I have used Yacon Syrup in place of sugar, when I need something sweet. I find this product to be very helpful for me and it taste great!
